Doctor by the Universidad de León with the thesis Calidad microbiológica de la carne de conejo y estimación de la eficacia de algunos tratamientos tecnológicos de conservación 2006. Supervised by Dr. María Luisa García López, Dr. Andrés Otero Carballeira.

Dr Rodríguez-Calleja is Associate Professor at the Department of Food Hygiene and Food Technology of the Veterinary Faculty at University of León (Spain). He is an Agricultural Engineer (2000), and B.Sc. on Food Science and Food Technology (2004), and obtained his PhD in 2006 (University of León). He has led several research projects, published JCR-papers and some chapter books. He teaches subjects in Degree and Master focusing on Food Science and Food Engineering.
