Abstract

Antibiotic resistance is now a major problem worldwide. Its monitoring in different settings, including food and its processing environments, is the first step to control this serious threat to public helath. Poultry meat is one of the products most frequently implicated in cases and outbreaks of human food infections and poisoning. In this regard, a significant percentage of the microbial load of this food may be caused by cross-contamination phenomena due to the presence of biofilms on inert surfaces throughout the production chain.
