Abstract
The present work has consisted on the estimate of the analytic repeatability of the fatty acids of the sheep milk through the analysis of 12 samples with 10 repetitions each sample. The estimate for 36 fatty acids, 6 groups and one index has been carried out. A special interest has put on in those fatty acids that can play an important role in the human health, butiric, oleic, polyunsaturated C18 and especially the CLA (Conjugated linoleic acid). The estimation of concentration of fatty acids in the milk through gas cromatography, allowed a reliable quantification, with a repeatability between 85 and 90% for those AG with a superior concentration to 1%, as well as those important AG or of great interest for the human feeding.
