Abstract

Thirty-two merino lambs (15.6 kg initial body weight, BW) were distributed in 4 experimental groups to study the effect of the inclusion of different levels of sunflower soapstock (SS) in the diet (0, 15, 30 and 60 g SS/kg TMR for Control, OG15, OG30 and OG60 groups, respectively) on the meat oxidation processes. Lambs were slaughtered at 27 kg BW. Longisimus lumborum and gluteus medius muscles were extracted for thiobartituric reactive sustances (TBARS on days 0, 7 and 14 of storage) and oxysterols analysis (on day 7 of storage on cooked meat). TBARS values decreased with SS inclusion in the diet (P<0.05). However, no significant differences were observed in oxysterol content attributable to diet (P>0.05), thus suggesting the existence of different processes in the oxidation of fatty acids and cholesterol.
