Abstract
This experiment has been designed to study the effect of duration of transport and stocking density on carcass and meat quality of suckling lambs. A factorial design (2 x 2) defined by two duration of transport (30 minutes and 5 hours) and two stocking density (0.12 m2/lamb and 0.20 m2/lamb) was used. Measurements of carcass quality (weights and dressings) and meat quality (pH and colour) were assessed. Duration of transport affected (P < 0.05) to liver weight and commercial dressing, whereas stocking density only affected (P < 0.05) commercial dressing. However, duration of transport did not affect meat quality parameters, although stocking density affected (P < 0.05) to initial and at 24 h pH.
